CAESAR DRESSING

Ingredients

8 ANCHOVY FILLETS PACKED IN OIL, DRAINED
2 SMALL GARLIC CLOVES
2 LARGE EGG YOLKS
1/2 WHOLE LEMON, JUICED
¾ TEASPOON DIJON MUSTARD
1/2 CUP OLIVE OIL
1/4 CUP FINELY GRATED PARMESAN
Kosher SALT
FRESHly GROUND BLACK PEPPER

Preparation

Place the anchovies and garlic into a blender or food processor. Throw in egg yolks, lemon juice, and mustard. Blend on low speed for a few seconds. Drizzle the olive oil into the mixture in a small stream. Scrape down the sides. Add the Parmesan, salt and a generous grind of black pepper. Pulse the whole thing together and mix until thoroughly combined. Season with salt and pepper to taste. 

Set in refrigerator till ready to use.
