HOT HONEY ROASTED BROCCOLI

 

Roasting veggies is extremely easy and so tasty, it's bulletproof you can't mess it up. Just toss veggies with olive oil and season, pop in oven and boom you have delicious veggies. 

The first time I had Mike's Hot Honey was at Paulie Gee's a popular pizza joint in Brooklyn. I went with a group of friends and we ordered numerous pizzas. My favorite pizza was the Hellboy, the toppings were fresh mozzarella, italian tomatoes, berkshire soppressata picante, parmigiano Reggiano, and Mike's Hot Honey. Everyone at the table couldn't stop talking about the honey, and how it gave the pizza an extra kick. One of my friends said that Whole Foods carried it. The next day I bought a few bottles and ever since then I try to cook with it as much as possible.

If you can't find Mike's Hot Honey or don't want to order online, combine 1/2 cup honey, 1 thinly sliced Fresno, jalapeño, or red Thai chile, and 2 tablespoons water in a small saucepan. Bring to a boil over medium heat (add another thinly sliced chile if more heat is desired). Boil until thickened slightly and syrupy, about 6 minutes.

 

Ingredients

1 1/2 pounds broccoli, cut into florets, stems peeled and sliced or diced
2 tablespoons olive oil
1 tablespoon hot honey, and more for serving

Kosher Salt
Freshly ground pepper

Preparation

Preheat oven to 400 degrees.

Toss the broccoli with olive oil, honey, salt, and pepper in a bowl. Spread broccoli out on baking sheet and then roast, stirring occasionally, until the edges are crispy and the stems are crisp and tender, about 20 minutes.

Remove from oven and drizzle with hot honey.
