COCONUT RICE
Chrissy Teigen has given us a beautiful baby girl to obsess over, tweets that constantly make me laugh, and gives me major #couplegoals, but the most important thing she has given me is releasing her cookbook Cravings, and sharing her Sweet and Salty Coconut Rice recipe. Its so good its the perfect combination of savory and salty. I can eat the whole bowl of this, Timmy and I fight over who gets the last bite. The rice can be eaten on its own, but it pairs really well with my Spicy Pineapple Pork Chop.
Chrissy's recipe calls for toasted shredded coconut , but I am not a fan of actual coconut pulp it itches my throat. Add if you want to be more like Chrissy.
INGREDIENTS

1 1/2 cups jasmine rice, rinsed and drained
1 (14oz) can coconut milk (full-fat, not light)
1/3 cup sugar
2 teaspoon kosher salt

PREPARATION
Rinsing rice is a key step to fluffy rice. Add rice to strainer, run water over rice until the water runs clear. At the start of rinsing the water will appear very cloudy.
Combine rice, coconut milk, sugar, salt, and 2 cups water in a medium saucepan. Bring just to a boil, stirring to dissolve sugar, then cover and reduce heat to low. Stirring occasionally. Cook until rice is tender and liquid is absorbed, 25-30 minutes. Fluff rice with a fork; cover and let sit for 10 minutes.
