EASY TOMATO SOUP
With winter coming all I want to do is eat soup, my favorite type of soup is anything with a tomato base. I absolutely love this recipe, this soup is hearty and tastes so fresh. It is an easy meal to prepare as there are few ingredients and takes little to no time to prepare.
If you want to basically do no work throw all the ingredients in your crock pot, put on low and cook for 6-8 hours.
INGREDIENTS
3 tablespoons olive oil and more for drizzling
4 cloves garlic, sliced
2 (28-ounce) can whole peeled tomatoes, with juices
3 cups chicken broth (if vegetarian replace with vegetable broth)
Kosher salt
Freshly ground black pepper
serving: 4
PREPARATION
Heat the olive oil in a large pot over medium heat. Add garlic, cook until softened, about two minutes.
Add the tomatoes and chicken broth. Season to taste with salt, pepper and bring to a boil. Reduce the heat to low and simmer uncovered for 40 minutes. As it simmers gently break apart the tomatoes with a wooden spoon.
Ladle soup into bowls, season with salt and pepper and drizzle with olive oil.
