SOCCA PANCAKE

 

I always crave smoked salmon on a bagel, but Portland doesn't have many good bagel options like NYC did. That's ok though because I can't eat bagels every day. As a result, I'm trying to get more creative on the breakfast front to find new ways to eat smoke salmon. Here, I decided to make socca pizzas into a pancake and top with my favorite breakfast toppings. 

 

INGREDIENTS

Makes 6 - 8 pancakes

2 1/2 cups chickpea flour
2 tablespoons olive oil
2 cups water
salt
ground black pepper
olive oil for frying
creme fraiche
8 oz smoked salmon
eggs for fried egg

PREPARATION

In a medium bowl, whisk flour, oil, water, and a pinch of salt and pepper until no lumps remain. In a non-stick pan over medium heat, add oil for frying. Ladle 1/4 cup of batter into pan to form round pancakes and cook for 3 to 5 minutes, or until bubbles appear. 

Top with a scoop of creme fraiche, slices of smoked salmon, and a fried egg. Season to taste with salt and pepper.
