GARLIC LAMB CHOPS
My Maw Maw loved lamb chops, my dad would make them for her on special occasions. I can remember trying them but thought they were disgusting and swore I would never eat it again. Oh silly 10 year old self.
A few years ago I ordered lamb chops at a restaurant and I was surprised how tender and delicious they were. I was hooked!
I then discovered how easy they are to make, you just need salt, pepper and to sear in skillet or if you get a whole rack roast them. Since I am on a marinade kick, this recipe is marinated in a garlic olive oil sauce.
Lamb chops are pricey so they are special treat that are enjoyed for special moments, such as holidays or family gatherings.
INGREDIENTS
1 pound rack of lamb, cut into individual chops (butcher can do this for you)
salt
freshly ground pepper
4 garlic cloves, minced
1/4 cup and 1 tablespoon olive oil
1 tablespoon fresh lemon juice
serving: 2-4
PREPARATION
Season lamb with salt and pepper.
Mix garlic, 1/4 cup olive oil, and lemon juice in a plastic bag. Add lamb chops and turn to coat. Chill for at least 1 hour and up to a day.
Heat 1 tablespoon olive oil in cast iron or heavy bottom skillet over medium-high. Add the lamb chops and cook until the chops are browned on the bottom, about 3 minutes. Turn the chops and cook until the chops are browned, about 2 minutes longer for medium rare meat.
Transfer the chops to plates and enjoy!
