SHAKSHUKA WITH SPICY SAUSAGE

 

My favorite mediterranean restaurant in New York City was Meme, and they serve shakshuka and it is out of this world, its oh so flavorful, spicy and saucy. Its served with a tahini sauce that is also very good.

I recently have been seeing shakshuka all over social media, I think its because I have been wanting to make shakshuka since I can't get it from Meme anymore. So I of course made it at and the results were even better than at Meme. Adding spicy sausage really gives an extra dimension to it. 

Not going to lie this might be one of my favorite recipes on the blog. Its easy, healthy, and comforting, 

 

INGREDIENTS

3 tablespoons olive oil
1 large onion, halved and thinly sliced
3 garlic cloves, Sliced
1 pound ground spicy sausage, out of casings
2 (28-ounce) can whole peeled tomatoes with juices
1 teaspoon ground cumin
2 teaspoon sweet paprika
kosher salt
freshly ground black pepper
6 large eggs
Chopped cilantro, for serving

serving: 4-6

PREPARTION

Preheat oven to 375 degrees. 

Heat olive oil in skillet over medium heat. Add onion until soften about 5 - 10 minutes. Toss in garlic and cook for another 1 -2 minutes. Add sausage, breaking it up with a wooden spoon and stirring occasionally, until browned and cooked through, 8–10 minutes. 

Add tomatoes with juices, cumin, paprika, and season with salt and pepper; bring to a boil and then turn to medium low and simmer for at least 20 minutes.

Crack eggs into skillet over tomatoes. Season with salt and pepper. Transfer skillet to oven and bake until eggs are set, 10 minutes. Sprinkle with cilantro and serve with feta, olives, crunch bread or homemade flatbread.
