SPAGHETTI CARBONARA WITH SPICY SAUSAGE

 

This is my go to pasta, its creamy, spicy and comforting. Normally I don't add spicy sausage, but I had some in my freezer that I wanted to get rid of and it ended up being a nice touch.

This pasta requires little ingredients, and I usually have them in my kitchen. It takes under 30 minutes to prepare. You can adjust the amount of butter if you are watching your calorie intake, or you can add more butter then the recipe asks for if you just don't give a fuck (like myself). The best part is it is Gluten Free. 

 

Ingredients

1 tablespoon olive oil
1 pound spicy sausage, out of casing
Kosher Salt
2 boxes of Gluten Free spaghetti
or 1 box of spaghetti
4 tablespoon butter
1/2 cup parmesan, and more for serving

preparation

Heat olive oil in dutch oven over medium heat. Add sausage, breaking it up with a wooden spoon and stirring occasionally, until browned and cooked through. Transfer with a slotted spoon to a plate.

Bring a large pot of salted water to a boil. Cook spaghetti, stirring occasionally, until al dente. Drain and reserve at least one cup of pasta water.

In dutch oven melt butter over medium. Add pasta, parmesan, sausage, and 1/4 cup of reserved pasta water tossing until cheese has melted. Add some of the set aside pasta water. Adding more pasta cooking liquid as needed, until sauce coats pasta, season with salt and pepper.  Remove from heat, and quickly add egg yolks. Mixing with tongs until a thick, glossy sauce forms.

Divide the pasta among bowls, top with more pepper and sprinkle with parmesan on top.
