SWEET POTATO TOAST

 

My sister is currently on an intense diet, she can only eat protein and vegetables. She has cut out all carbs in her diet, even fruit! She has lost over 30 pounds and looks amazing but gosh she is really missing out on some tasty foods. She has heard about using sweet potatoes as a replacement for toast and wanted me to try it out for her and see how it tasted. My final verdict for this was that it's great!

It is a great substitute for bread. The key to making the sweet potato toast is making sure not to over cook it, if you want it to be tender not mushy. 

 

ingredients

1 large sweet potato
olive oil
salt
freshly ground black pepper

topping combo:
almond butter, banana, & Mike's hot honey

Spicy brown mustard, smoked salmon, & capers

Prosciutto & Fried egg

avocado slices & red pepper flakes

preparation

Pre-heat oven to 450 degrees

Wash sweet potato and slice sweet potato lengthwise into 1/4" thick slices.

Place sweet potato on baking sheet and lightly coat sweet potato slices with olive oil. Season with salt and pepper. 

Bake for about 10-15 minutes, flip slices over and bake for another 5-10 minutes or until a fork can easily pierce the sweet potato. Don’t overcook or the sweet potato toast will become mushy. 

Set oven to broil and continue to cook for 2 minutes on each side, until toasty.

Remove from oven and top with your toppings of choice and enjoy.
